French Toast
3 eggs
3/4 cup milk
1 tablespoon sugar
1/4 teaspoon salt
8 slices white bread

Beat eggs, milk, sugar add salt with fork or whisk
Heat 1 tablespoon margarine or butter in skillet over medium heat until melted. Dip bread into egg mixture; gook until golden brown, about 4 minutes each side

Muffins
Popular Muffins

1 egg
1 cup milk
1/4 oil
2 cups flour
3 teaspoons baking powder
1 teaspoon salt

Sweet Muffins

1 egg
1/2 cup milk
1/4 cup oil
1 1/2 cup flour
1/2 cup sugar
2 teaspoons baking powder
1/2 teaspoon salt

Heat oven to 400. Grease bottom of 12 medium muffin cups. Beat eggs stir in milk and oil. Mix in remaining ingredients just until flour is moistened. Batter should be lumpy.

Fill muffin cups 2/3 full. Bake 20-25 min or until golden brown. Immediately remove from pan

Homemade Macaroni and Cheese
Serves 4

1 Cup elbow Macaroni
2 Tablespoons Butter
2 Tablespoons Flour
11/4 Cups milk
Dash of Pepper
11/4 Cups Velveeta Cheese - diced


Bring 2 quarts of water to a rapid boil in a large kettle.
Add the macaroni after the water boils. Stir occasionally.
Cook about 9-10 minutes.
Drain the macaroni in the colander in the sink.

Cheese Sauce
a. In medium saucepan, melt b utter, and flour and stir until smooth, remove from heat.
b. Gradually add milk, stirring constantly until mixture is smooth. Add pepper,
c. Return to medium heat. Cook, stirring constantly until mixture is think and smooth.
d. Add cheese and stir until melted. Cover pan and remove from heat. Don't allow cheese sauce to burn on the bottom of the pan
Snickerdoodles
MIX thoroughly...
1/4 cup margarine
1/4 cup shortening
3/4 cup sugar
1 egg

Sift together and stir in with a wooden spoon.
1 1/4 cups plus 2 Tbsp flour, 1 tsp Cream of Tartar,
1/2 tsp baking soda,
1/8 tsp salt

Shape the dough into 1 inch balls. Roll in a mixture of 3 Tbsp sugar and 1 tsp cinnamon.
Place balls 2 inches apart on an ungreased cookie sheet.
Bake 8-10 minutes until lightly brown... but still soft.
These cookies puff up at first, then flatten out.
Baking Temp 400 Degrees
Time 8-10 minutes
Yield: about 2 1/2 dozen cookies
Biscuit Breakfast Ring
1/3 cup brown sugar, firmly packed
3 Tbsp butter or margarine
1 Tbsp water
1/3 cup chopped nuts (optional)
10 refrigerator biscuits


Place the sugar, butter, and water in a 1 cup glass measure. Heat on full power for 1 minute. Stir until the butter is melted.
Invert a 6 oz. glass custard cup in the center of a 9x2 inch round glass dish to form a ring mold or use a microwave tube pan.
Sprinkle nuts evenly around the bottom of the pan. Cut each biscuit in half. Dip each piece into the sugar mixture, so the biscuit is coated. Arrange around the dish.
Cook on full power for 2 1/2 - 3 minutes or until the top springs back when lightly touched. Let stand 2 minutes. Invert the ring on a serving plate.


This recipe was tested in a 700 watt microwave oven. If your microwave is more powerful, you will most likely have to reduce the cooking times.
Puppy Chow

1 12-ounce bag semi-sweet chocolate chips
1 stick of butter or margarine
1 cup creamy peanut butter
1 box Crispix cereal
3 cups powdered sugar
Large grocery sack


Melt the chocolate chips and the butter, either in the microwave in a bowl or on the stovetop in a pan.
Add the peanut butter. Mix well.
Pour over the cereal in a large bowl. Stir. Let the mixture cool a little.
Put the powdered sugar in the grocery sack. Dump the cereal mixture in the sack, fold down the top and shake well to coat.
Pour out onto pans to dry.



Strawberry Smoothie
Serves 2

1 cup fresh or frozen strawberries
½ cup plain yogurt
1 cup skim milk
2 Tablespoons sugar
1 cup of ice

Combine all ingredients in a blender and blend on low until smooth
Sugar Cookies
¼ cup solid vegetable shortening
½ cup sugar
1 egg
¼ teaspoon vanilla
1-cup flour
¾ teaspoon baking powder
Sugar


Preheat convection oven to 325 degrees.
In a mixing bowl combine the shortening and the sugar. Using an electric mixer cream these 2 ingredients together.
Add the egg and vanilla to the creamed mixture. Using an electric mixer beat this mixture for about 1 minute.
In another bowl mix the flour and baking powder together.
Gradually add the dry ingredients to the creamed mixture, using an electric mixer, mix well.
Chill the dough.
Lightly cover the rolling pin with powdered sugar.
Divide the dough in half.
Shape each half of the dough into a ball.
Coat the dough ball with powdered sugar.
Using the rolling pin, roll the dough out until it is 1/4 inch thick.
Cut the cookies out from the dough with a cookie cutter.
Place the cookies on an ungreased baking sheet.
Continue repeating until all the dough has been used.
Lightly sprinkle sugar on top of the cookies.
Bake for 8 minutes in a convection oven at 325 degrees.
Remove to a wire rack to cool.
Carmel Corn
7 large marshmallows
1 stick butter or margarine(do not use the soft type)
1/2 cup brown sugar
3 to 4 quarts of popped corn


Combine the marshmallows, butter, and brown sugar in a mixing bowl. Cook on full power for 2 1/2 minutes. Stir. Cook additional 30 seconds or until the marshmallows are melted.
Stir and immediately pour over the popcorn. Stir the mixture to evenly coat the popcorn with caramel.
Let the mixture cool and break into pieces.


This recipe was tested in a 700 watt microwave oven. If your microwave is more powerful, you will most likely have to reduce the cooking times
Baked Apples
Serves 2

2 apples
2 Tablespoons margarine
2 teaspoons cinnamon
2 Tablespoons brown sugar
2 Tablespoons raisins (optional)

Core the apple and try not to cut the bottom out of the apple. Make sure all of the seeds are removed.
Place each apple in a glass custard cup.
Place the margarine in a glass measuring cup and microwave on high for 45 seconds.
Add the cinnamon, brown sugar and raisins to the melted margarine. Stir well.
Spoon half of this mixture into the cavity of each apple.
Cover the apple and custard cup with plastic wrap.
Microwave on high for 4 minutes.
Remove to a wire rack to cool for 5 minutes.
Remove plastic wrap.


* Recipe was tested in a 1100 watt microwave.
Chocolate Chip Cookies
1/2 cup granulated sugar
1/2 cup packed brown sugar
1/3 cup margarine or butter, softened
1/3cup shortening
1 egg
1 teaspoon vanilla
1 1/2 cup all purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt.

1. preheat oven to 375
2.Measures and stir together in a large mixing bowl:
1/3 cup margarine or butter, softened 1/3 cup shortening
3. Measure 1/2 cup granulated sugar. Stir into margarine and shortening
Measure 1/2 cup brown sugar and stir into margarine an shortening
4. Stir in 1 egg and 1 teaspoon vanilla into ingredients in large mixing bowl
5. measure into a small mixing bowl:
1 1/2 cups all purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
6. Gradually stir flour mixture into ingredients in large mixing bow,
7. Stir in 1 cup chocolate chips.
8. Drop rounded teaspoonfuls, about 2 inches apart, onto ungreased baking sheet . Bake until light brown, 8-10 minutes.
